Blueberry Banana Bread

Ingredients:
1 cup almond flour
1/4 cup coconut flour
1 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon
1 tbsp ground flax seed
1 tbsp hemp seeds
2 small bananas, or one large (mashed)
2 tablespoons olive oil
3 eggs (lightly whisked)
1/4 cup maple syrup (or other sweetener of your choice)
1-2 cups blueberries

Instructions:
Preheat oven to 350 degrees F.
Combine the dry ingredients in a bowl and mix well. In a separate bowl, mash the bananas until they are a creamy consistency. Add the oil, eggs and maple syrup to the banana mixture and mix well. Pour the dry ingredients into the wet ingredients and mix just until combined.
Gently fold in your fresh or frozen blueberries. Distribute the blueberries evenly throughout the batter, being careful not to overmix as you'll break the berries and cause the bread to turn purple. (It will still taste just as good but may not be as pretty!)
Line a loaf pan with parchment paper, making a “sling” for easy bread removal, and pour in the batter. Bake in the oven for 45 - 50 minutes (or until tester comes out clean). When fully cooked, lift the parchment paper out of the pan and let cool before slicing.
